There is a lot of buzz concerning "gray" water....the municipality that my restaurant is located is stating that we will need to comply in the near future. Known as greywater or sullage, it’s defined as wastewater generated from plates and wash-hand basins, showers, and baths. Because it is nearly as clean as potable water, it can be recycled on-site for uses such as toilet flushing, landscape irrigation, and constructed wetlands. Greywater often also includes wastewater from clothes washing machines and sometimes include discharge from dishwashers and kitchen sinks. As a restaurant owner, what does this mean to you? What is this all about?
Foodservice establishments produce a large volume of food and related waste. Everything from food preparation to dishwashing and packaging contributes to the pressure of landfill availability. The result is an increase in greywater production; if not recycled, this nearly clean potable water is simply like flushing money down the drain!
Presently, there are several different types of systems designed at either recycling the water without purifying it, or recycling the water while purifying and decontaminating it. Unpurified and recycled greywater is great for toilet use, gardening, irrigation, and the like. Obviously, the best use for purified water is for either drinking, handwashing, or other uses that may involve direct contact with one’s mouth.
A leader in greywater technology is T&S Brass with their Enviro Pure Systems division. The typical costs of waste disposal at $95-$120 per ton are substantially reduced to a mere $28/ton. All this and it's good for Mother Earth as well!
