Packing 230,000 BTU of cooking power, the Blodgett Steam BCX-14G DBL is a dependably constructed high-performance double-stacked gas combi steamer that comes with durable stainless steel construction and two cooking chambers each capable of holding 14 full-size hotel pans or seven (7) full-size sheet pans. This unit features manual controls designed for ease of operation. This combi oven is able to cook in various ways to accommodate even the most diverse of menus. 

You can use it to cook with pressureless steam, which is great for making healthy dishes where the flavors, nutrients, texture, and all original qualities are kept and cooked with little to no fat. You can also cook with convection heat, which is perfect for roasting meats and vegetables to deliver moist but perfectly browned results. This combi oven is also able to use a combination of both so you can benefit from the top-quality results and quick cooking time. Making this unit more versatile are additional cooking functionalities that include rethermalizing, low-temp steaming, and cool down. 

When it comes to steaming, this combi oven relies on a self-contained steam generator to produce steam. Since it is self-flushing and is located separate from the cooking compartments, this unit facilitates easy recovery and switch between different modes.

Blodgett added specific functionalities such as steam-on-demand, which allows you to introduce steam in an ongoing cooking process, and Vario Steam, which is specifically designed for getting the optimal roasting results. The open vent system prevents flavor transfer so you can cook various dishes without an unsullied taste. A cavity vent control gets rid of the steam at the push of a button and for added safety, the door latch initiates a steam release as well before fully opening.

Each oven features five (5) stainless steel wire shelves that can be moved to 13 different positions depending on the size and the quantity of the food you want to cook at a time. Each oven comes with a multi-speed reversing fan to move the heat and steam throughout the cooking chambers to ensure that every rack gets a uniform amount for consistent quality. The 4" core temperature probe provides precise details on the temperature to guide the cooking process and ensure accurate results. You can even use the oven to hold food at serving temperatures for longer periods.

This commercial oven lets you program as many as 10 recipes, so you can get the cooking process started much quicker and maintain consistency across each dish. The USB port lets you upload and download recipes as well.

The easy-to-clean curved interior is illuminated with halogen lights for max visibility, so you can check the progress of your cooking through the dual-pane tempered glass windows on each door whenever you need to. The oven also features an integral door switch and electronic spark ignition.

You can maintain and even improve the oven's performance by deliming it, and you can perform this process only when you need to as the unit will tell you when exactly it needs it. You have a semi-automatic deliming system on board to go through the process without hassle as well as a complete set of materials including the deliming bottle and pump assembly and pressure spray bottle. Onboard you also have a retractable hose and hinged pressure panels and inner glass, and removable stainless steel side rails for thorough washing and cleaning. To keep the outside area of the oven, there is a condensate trough mounted on the door. A pivot-out user interface panel simplifies the servicing process.

This Blodgett BCX-14G DBL double-stacked electric combi oven is mounted on a floor stand with rack support to provide stability and storage for essentials. This model is certified by cETLus and NSF and comes with a one-year warranty on parts and labor. It requires a 120 and 208-240 voltage with a single-phase connection.
