The Hobart PPASTRY-HL80 80 qt. "P" pastry knife is designed for use with 80 qt. bowls on Hobart HL800 and HL1400 all-purpose commercial mixers. This mixer pastry knife cuts through the thickest of dough, making it perfect for mixing pastry and pie dough, among other things. It features a pull-out pin attachment connection and a quick-release design for easy installation and removal.
