If you’re looking for a griddle that can withstand the demands of a busy commercial kitchen, the Southbend SSB-32 Platinum Series Broiler/Griddle may be what you’re looking for. With more than 100 years in the business of manufacturing heavy-duty kitchen equipment, Southbend, a division of the Middleby Corporation, introduced this gas-powered radiant broiler/griddle combination with the needs of the meticulous business owner in mind.

This griddle broiler has a sturdy stainless steel construction to ensure it can bear the brunt of cooking large volumes of food the entire day. It is mounted on a 27 1/2” equipment stand with stainless steel adjustable legs, but you can also get it with optional casters and a cable restraint kit to lock the casters if you plan to move the unit around your cooking area.

This unit also comes with shorter legs at no extra cost if you want to mount it on a countertop, a cabinet base, or a refrigerator or freezer base. The last option is especially attractive if you want to save time and space since you can store frozen food items inside the refrigerator base and simply take them out when you need to put them on the griddle. You can use any existing refrigerator base that can support the weight of this unit, but Southbend also has a line of refrigerator bases that can do the job.

The real star of the show, however, is the broiler. It has chrome-plated grids that reach your desired temperatures faster and stay hot longer. The chrome plating also prevents bits of food from getting stuck to the grids to minimize the hassle of cleaning a commercial broiler. Speaking of cleanup, the broiler has a 7 3/4-quart grease drawer that catches all the oil that accumulates from cooking all that meat.

If you need to prepare different food items at the same time, take advantage of the independent variable burner controls. They let you set the heat of separate sections of the broiler individually. To further refine your cooking settings, you can also adjust the rack into nine different positions using a patent-pending paddle release. All knobs and handles are cool-touch so you don’t need to use kitchen towels to protect your fingers. When a food item is done, you can simply roll out the rack on the smooth dura-glide track and take it off the rack.

While your meat is cooking, you can save time by preparing other food items on the griddle. The griddle on the Southbend SSB-32 has a 1/2”-thick plate that heats up faster than thicker plates. It also recovers more quickly from having frozen food items placed on it. The cooking surface is 27 3/4” wide by 28” deep, which provides ample space for budding food service businesses. The griddle has 4” rear and side splash guards to keep hot grease from splattering all over nearby equipment. To get rid of the grease, you can easily push it toward the griddle’s removable grease catch, which can contain up to 2 1/2 quarts of grease.

If you would like a front rail to hold utensils and food products, you can get an optional 7 1/2” front rail at no extra charge. For an additional fee, you can include square belly bar mounts to go with the front rail or a separate front rail with cutouts for saucepans.
