To maintain the flavor and texture of certain dishes it’s important to hold them at the right temperature and humidity. The MT-1826-14 Solid Door Mobile Heated Holding Cabinet from FWE allows users to set both these parameters allowing food to be held for extended periods without affecting flavor and texture. The universal tray slides are designed to hold 12”x20” or 18”x26” pans and can have a maximum spacing of 4-½” and can be adjusted at 1-½” increments.

The simple electronic controls on this holding cabinet are front-mounted at eye-level making them easy to access and monitor. The controls are recessed into the unit to prevent them from getting in the way. Two dials allow for adjusting the temperature from 90° to 190°F and the other is for adjusting humidity between crisp and moist. Temperature and moisture are controlled separately via two Incoloy nickel-chromium heating elements. Water to add moisture is held in a 12”x20” stainless steel water reservoir that’s easy to remove for cleaning. The warm, humid air is distributed evenly throughout the cabinet by a fan-cooled high-temperature blower motor.

Accessing the interior is simple with the easy to grasp magnetic workflow handle. The insulated stainless steel door locks the heat in thanks to a cabinet-mounted door gasket. The cabinet is constructed from stainless steel for durability. The exterior is 20 gauge and features a polished finish that gives the unit a great look that’s easy to maintain. The interior features 22 gauge construction with coved corners for easy cleaning. This cabinet is insulated with UG-26 high-density fiberglass in the bottom, back, sides, and top of this cabinet. This keeps the heat in while saving on power usage. 

For portability, this cabinet features 3-½” swivel casters. A 1-½” continuous wraparound aluminum channel featuring a snap-n vinyl cushion is bolted to the frame and extends past the doors to provide additional protection. The vinyl bumper is non-marking to keep walls and doors in the venue free from scuffs.

This holding cabinet is UL listed, UL EPH classified as well as being IPX4 and CE certified to meet strict standards.
