The Groen BPM-30GA Braising Pan is a good choice for medium to large establishments that require large batch cooking. The 10” deep 30-gallon gas heated cooking pan has a firing rate of 104,000 BTU/hr and can be used to boil, steam, fry, saute, sear and of course, braise large amounts of food in a single batch.  

The cooking surface is made from a heavy ⅝” thick stainless steel clad plate and is evenly heated with welded fins that transfer heat from the combustion chamber/gas burner. This heavy plate prevents distortion or warping and has a 100 emery grit finish which prevents food from sticking and in turn simplifies cleaning.  The cooking pan has 3” radius corners, this makes stirring the contents of the pan more convenient. Checking the amount of liquid in the cooking pan is simple with graduated fill-level marks in both gallons and liters.

The pan body of the Groen BPM-30GA Gas Tilting Skillet Braising Pan is made from durable 304 stainless steel and has a #3 finish which is easy to clean and maintain.  A faucet can be mounted on the left, right or right-rear with the included bracket. The pan is mounted on an open leg stand with height adjustable bullet feet keeping everything level on uneven flooring.

The IPX6-rated stainless steel control unit of this model is on the right-hand side.  Thee controls include: a power on-off switch with an indicator light, a knob for setting both the temperature and time, an LED display for the set temperature or cook time, a heating indicator light, buttons for resetting the low and high temperature settings,a manual mode to select the temperature or the pan and a button to set the timer with an indicator light.

The Groen BPM-30GA has a temperature range of 175 to 425°F/ and is thermostatically-controlled. It will automatically shut off when the high temperature value has been met and powers on when the temperature falls below the low temperature set by the user.  All Groen tilting braising pans have a high limit thermostat for safety.

This model uses a worm-and-gear manual tilt mechanism, it is easy to operate with precision when pouring.  The pan body goes to full vertical tilt in 24 turns and can go past the vertical to simplify cleaning.

This model uses 5.0 amps at 115v/60/1-ph and requires a ½” NPT gas connection. Make sure to select either the LP gas or Natural gas option depending on what your establishment uses.
