Groen BPM-30GC Description
The Groen BPM-30GC Gas Tilting Skillet Braising Pan is ideal for medium to large establishments that require large batch cooking. The 30 gallon, 10” deep pan can be used to fry, sear, saute, steam, boil, and of course, braise large amounts of the product of your choice. This gas heated model has a firing rate of 104,000 BTU/hr.
The cooking surface is a ⅝” thick plate clad in stainless steel that is evenly heated by specially welded heat fins that receive heat from the combustion chamber/gas burner. The corners of the braising pan have a 3# radius which makes stirring the product simple as well as making cleaning easy. To easily see how much product you have in the pan graduated fill level marks are etched into the side in both gallons and liters. The cooking surface has a smooth 100 grit emery grit finish that prevents the product from sticking and keeps the unit simple to clean.
The Groen BPM-30GC Braising Pan uses a hand crank to manually tilt and pour the product, it is simple to use and very precise. The worm-and-gear mechanism is smooth and in just 24 turns the pan is in the full vertical position, it can also be partially inverted to make cleaning easier.
The body of this unit is made from 304 stainless steel in a solid one-piece welded construction with a #3 finish. This makes the unit easy to clean and maintain its good appearance over the service life of the machine. The unit also features adjustable feet to keep it level on uneven flooring. A faucet mounting bracket is included and allows you to mount a faucet on the left side, right side or right rear of the unit.
The controls are mounted on the right side in an IPX6-rated stainless steel housing and include power on-off switch with an indicator light, temperature control knob with a range from 175 to 425°F, and a heat indicator light. The temperature is regulated thermostatically, when the target temperature is reached by the pan it automatically shuts-off and when the temperature dips below the set temperature it starts back up. All Groen tilting braising pans have a high limit thermostat for the safety of your crew and establishment.
This model uses 5.0 amps at 115v/60/1-ph and requires a ½” NPT gas connection. Make sure to select either the LP gas or Natural gas option depending on what your establishment uses.
