The Groen BPP-40EA Braising Pan is the ideal all-around equipment for large batch cooking. This electrically heated 40-gallon power assisted braising pan is the real money maker for large establishments that need to cook a lot of food efficiently. Although capable of cooking a large volume of food, the unit itself takes up as little space in the kitchen as possible taking up only 48” in width and 39-¾” from front to back

Whatever it is you’re looking to cook, the expansive 35-¾” wide, 28-¼” long and 10” deep cooking pan is more than capable of getting the job done. Moving food around the inside of the cavernous pan is made simple with its 3” radius corners, no need to worry about food getting stuck in the corners. Normally food sticking to the inside of the pan leading to longer downtime to clean it out, to lower cleaning times the entire interior of the cooking is made from corrosion resistant 304 stainless steel and has been polished to a 100 emery grit finish. The cooking surface itself is a ⅝” thick plate clad in stainless steel which is evenly heated with flat bar electric elements.  

The Groen BPP-40EA Braising Pan features advanced controls, aside from temperature control it also has a timer. This feature makes sure that a large batch of food doesn’t end up getting burnt in the hustle and bustle of a busy kitchen. The controls are mounted into an IPX6-rated stainless steel housing. An LED readout displays the cooking time and temperature while a single knob is used to set the temperature and cook time. Tilting the pan is simple with power tilt, which is controlled with a 3-position switch on the control panel. To aid in griddling the pan can be tilted to a 7-degree angle.

This braising pan operates between 175°F and 400°F and is thermostatically controlled. When the target reaches the high temperature you specify it automatically turns off and when the temperature falls below the low temperature you set it automatically turns back on. For safety, all Groen Braising pans have a high limit thermostat.

The exterior of the tilting pan has a #3 finish which not only looks great but also makes it easy to clean and maintain. For your convenience, instead of needing to fill the pan with buckets of water a faucet can be added with the included bracket. Mounting points on the device are on the left, right or right rear of the device. The tilting braising pan stands on an open leg stand which makes it easy to clean beneath the unit. All four tubular steel legs have adjustable bullet feet to keep it level on uneven flooring.
