Ventless ranges are an ideal solution when you can’t make holes in your establishment’s structure for ducting like in historical buildings and high rises. They’re also a great investment if you’re leasing property short term since you won’t need to get any custom ducting put in so it’s completely usable in the new location immediately.
The way these ranges work is the hood above the cooking surface has a multi-part filter system consisting of a baffle filter, fire-resistant HEPA pre-filter, and an activated carbon element. The vapors created while cooking are drawn up and through the filtration system by powerful fans that exhaust the cleaned air out the top. The filters are replaceable and have indicators to let you know when they need replacing.
