The open burners deliver a total of 90,000 BTU and are equipped with a removable welded steel top grate that props up the pots and pans in a stable manner while also making it safer and more ergonomic to move them around when needed. They are designed to prevent clogging from liquids that fall from the cookware, which makes them very easy to keep clean. This means you also won't have to worry about the gas flow getting obstructed. There is also a removable drip tray that makes for easy maintenance. The hot top on this commercial range is powered by two (2) 20,000 burners that can be controlled with a single knob with a high and low setting. The removable steel plates can reach 700 degrees Fahrenheit at the center. A 9.25" deep rail at the front of the cooktop runs the width of the unit.

The front has a 9.25" deep rail that runs the entire width of the cooktop. The lining and burner box are fully insulated for excellent cooking efficiency. The 5" stainless steel flue riser redirects the heat and smoke from the burners and griddle away from the user and towards the ventilation hood.
