When you need to control both the temperature and humidity that food is held in a highly mobile package the FWE MT-1220-15 Solid Door Mobile Heated Holding Cabinet is an easy pick that provides users with plenty of flexibility. Inside removable fixed racks hold 12”x20” pans and have 2-⅝” spacing.

Users can easily adjust the holding temperature between 90° and 190°F with a dial featuring 10-degree increments. The humidity is controlled by another dial that ranges from moist to crisp. The controls are at eye-level making them easy to monitor and recessed to keep them out of the way. With separate Incoloy nickel-chromium heating elements the temperature and humidity can be controlled separately. Water to maintain the moisture is held in an easy-to-remove stainless steel reservoir measuring 12” by 20”. A powerful fan-cooled Hi-Temp self-lubricated blower motor makes sure warm, moist air is distributed evenly.

A magnetic workflow handle makes the door easy to open while maintaining a low profile. A cabinet-mounted door gasket conceals it from handling damage and maintains a secure seal for the insulated stainless steel door.

To make sure this cabinet is up to the task of serving in a commercial capacity it features 20 gauge stainless steel construction for the exterior. The exterior is polished for a clean look that’s easy to wipe down. The interior features 22 gauge stainless steel and coved corners that make cleaning as simple as possible. High-density UG-26 fiberglass insulation in the sides, top, bottom, and sides help maintain the temperature with minimal power. For portability, this cabinet features 5” maintenance-free polyurethane casters.

This holding cabinet is UL listed, UL EPH classified as well as being IPX4 and CE certified to meet strict standards.
