The Groen BPM-30EA Braising Pan is a mid-sized electrically heated model with manual tilting and advanced controls.  Ideally, this 30-gallon unit is best used by medium to large establishments that require large batch cooking. However, with its 38 ½” wide and 39 ¾” front to back footprint it can fit in almost any kitchen. This unit can be used for everything from a huge batch of soup to heating a bunch of sandwiches at a time.

The cooking surface is a thick 5/8" stainless steel clad plate that has no hot or cold spots thanks to its electric flat bar heating elements. The interior of the pan is made from a single piece of corrosion-resistant 304 stainless steel and the rounded corners have a 3" radius. The entire inside of the pan is emery polished to 100 grit.  These features make the Groen BPM-30EA Braising Pan easy to cook in and easy to clean.

The IPX6-rated control panel for this model has advanced features. Aside from adjusting the temperature between 175 and 400°F, you can also set the cooking time between 1 minute and 10 hours.  This makes cooking simple, accurate and repeatable, even in an extremely busy kitchen. The control panel itself has an LED readout for the temperature or cook time, a power switch with a built-in indicator light, a knob for setting temperatures and cooking time, a heat indicator light, buttons for setting the low and high temperature presets,  a manual mode button, and a timer set button.

The temperature in the Groen BPM-30EA is thermostatically controlled. When the temperature in the pan reaches the high temperature you set it will automatically turn the heat off and when the temperature in the pan reaches the low temperature you set it will automatically turn the heat back on. All Groen tilting braising pans have a high limit thermostat for safety.

The exterior of the pan has an aesthetically pleasing and easy to clean #3 finish, which is sure to maintain its appearance for many years. The unit is mounted on an open leg stand which allows for easy access beneath and around it. To keep the pan level all 4 tubular legs have adjustable bullet feet. Included with this unit is a mounting bracket for installing an optional faucet on the left, right or rear right of the device.

The braising pan can be operated at a 7-degree tilt for griddling. Tilting is precisely controlled with a manual hand crank. The worm-and-gear mechanism keeps the tilting motion smooth and precise and the pan reaches the full vertical position in 24 turns. For simplified cleaning, the pan can be tilted past full vertical.

Be sure to select the voltage appropriate for your kitchen's electrical system, the unit is available in 5 different voltage and phase options, 480v/60/3-ph, 14.0 amps, 208v/60/1-ph (55.0 amps), 208v/60/3-ph (32.0 amps), 240v/60/1-ph (48.0 amps), and 240v/60/3-ph (28.0 amps).
