Although this griddle is the smallest model available in the Accu-Steam™ lineup with 574 sq. in. of effective cooking area and 42,300 BTU/hr of output, it punches way above its weight class.

Other gas heated Commercial Griddles on the market rely on thick cast iron plates and multiple burners to try and keep temperatures stable and recovery times quick. However, since the multiple burners adjust the heat on specific areas of the griddle, the entire cooking surface can’t be used simultaneously since entire areas need to be avoided while they are recovering. 

On an Accu-Steam griddle, the entire effective cooking area can be used at the same time This is achieved with AccuTemp’s innovative Accu-Steam™ technology, which makes use of a hermetically sealed vacuum chamber with chemically pure water inside. Since steam is used to transfer heat to the 7 gauge stainless steel griddle plate, it is applied evenly and precisely where it is needed. Steam is naturally attracted to anything cooler than itself, and therefore, any spot that has cooled from having food on it will automatically be targeted with the heat it needs. The steam allows for near-instantaneous recovery of any spot on the griddle surface allowing food to be flipped right back onto where it was cooking without fear of a temperature drop-off.

The cooking temperature is controlled with a digital thermostat that can be adjusted from 200°F to 400°F, and due to the nature of the steam heating, you can expect a maximum temperature variance of ±5°F between any two spots. Three temperature presets can be programmed for convenience. For operations that require a single consistent temperature, manager mode can be used to completely lock out unauthorized temperature changes.

This Countertop Griddle comes on a sturdy stainless steel stand which comes with a convenient shelf for additional storage and casters allowing the unit to be rolled in and out of place for cleaning or maintenance.
