If you’re looking for a table-top natural gas-powered griddle that can provide near-instant recover then the AccuTemp GGF1201A4850-T1 Accu-Steam™ Countertop Griddle should be the first model to consider. This griddle has 1,437 sq. in. of effective cooking area and has a total heat output of 85,000 BTU/hr. The recovery time of any spot on the griddle is around 10 seconds, no matter the load. The way this griddle achieves this isn’t magic, but it is innovative.  The heart of AccuTemp’s Accu-Steam™ system is a hermetically sealed vacuum chamber that contains pure water. The water in the vacuum chamber is heated with infrared burners and the heated steam rises to evenly transfer heat to the 7 gauge stainless steel griddle plate. Since steam is making contact with the entire griddle plate, everything is heated equally. Steam has the natural tendency to be attracted to anything colder than itself, this means cold spots are completely eliminated and hot spots can’t form.

The temperature of the griddle can be set from 200°F to 400°F with the digital thermostat control and the entire surface only has ±5°F of temperature variation. 3 temperature presets can be configured, and if you don’t want anyone fiddling around with the temperature, a manager mode can be used to lock out any changes.
